Witloof

Witloof (chicory) is our national pride as to vegetables. We eat it cooked or raw.
Ham rolls with the chicory inside covered with a thick cheese bechamel sauce and then "au gratin" in the oven. A wonderful dish.
When eaten raw it usually is cut in small slices, mixed with a hard boiled egg and then we add some mayonaise or salad dressing. Delightful with a steak and pommes frites. I notice that in some countries it is sold a piece whereas we buy it by pound or kilo.

i want to come to your house for dinner! is chicory the same as endive? i like it steamed with toasted sesame seed and sea salt..
